Not that we ever really need an excuse, but Christmas feels like the perfect moment to open a bottle of something sparkling and mix up a cocktail that's fresh, festive and pink. We asked Matteo Battistello, bars manager at Soho House 76 Dean Street, for a recommendation. Here's what he suggested.

“The Sparkling Cosmo is a modern twist on the classic Cosmopolitan. To give the flavour more complexity, we used a split base of citrus vodka and gin, adding a bitter note of cacao and a floral one of rose. The drink has a sweet tendency but feels dry on the palate. Our bottled cocktail, which has elements of the appeal of Prosecco and rosé wine, is not easy to make at home – but you can recreate the flavours with this recipe.”

INGREDIENTS

25ml Grey Goose Le Citron
25ml Bombay Sapphire
20ml Creme De Cacao Blanc
10ml Miclo Rose Liqueur
15ml lime juice
20ml cranberry juice

METHOD

Shake vodka, gin, creme de cacao, rose liqueur, lime and cranberry juice together over ice and strain into a coupe glass. Serve with a twist of orange.
